Dijon Beef and Spring Greens
From Cooking Light’s SuperFast Suppers, p. 28:
Ingredients
1/4 cup Dijon mustard
1.5 TBSP balsamic vinegar
1 garlic clove, minced
2 tsp sugar
Mix these four ingredients together for the salad dressing. Set aside.
Ingredients for Salad
1 12-oz pack of spring greens
9 ounces of deli roast beef, sliced into smaller pieces
1 small red bell pepper, seeded and cut into bite-sized pieces
2 oz blue cheese, crumbled
1/2 c. sprouts (I left these out cuz sprouts are expensive!)
Arrange the greens, then top with the beef, red pepper stripes, cheese, and sprouts. Drizzle salads with mustard dressing to taste.
